Tomatoes,   The Fruit of Salad.

Corné is eagerly waiting, every year,  for the first spring breeze in August to sow the Tomatoes!  You can never have enough, for what you don’t eat you can cook up and make your own Tomato Reduction, which can be frozen and stored,  to be used in winter months.

There is nothing better that your own Spaghetti Bolognese, or Tomato Bredie with your own reduction.  We make it on the fire pit ouside mostly,  next to the Vegetable garden.    You sommer pick the fruit and herbs and in the pot it goes.  Cooking on the fire brings that smokey  flavour to the reduction.

The pot is filled to brim, and then cooked down, then more tomatoes are added.  When all the tomatoes are in,   you can add the herbs,  green peppers,  loads of salt and Wine….garlic….

Cook it down for 4 -5 hours,  the reduction should be thick.  Let it cool and scoop it into plastic bags or containers for the Freezer.  Voila!
